Eggless Whole Wheat Banana Waffles



I would have never made waffles or pancakes egg free in my lifetime if not for the current situation we are in. Like I keep saying one invisible tiny living organism has done the impossible, bringing the world to a stand still. Social distancing , lock-down may be the norm of the future but for now I am just planning to document it down here so as to live through these memories in the twilight years. That said this situation clearly demands us to make do with what we have in hand. Not that essentials are not available. Its just that I got too lazy (and practically no required at this juncture) to step out and then get back home and follow all the hygiene protocol just to get some eggs.

I have been wanting to share a recipe for waffles for the longest time. No, I ain't joking each time I made one I would be tempted but then guess now was the time to do it. I have made these waffles with many flours - buckwheat (it was okayish for our taste buds), Coconut flour (epic fail tried to go gluten free and all you see), Finger millet/ ragi ( way too heavy for waffles) , Oats flour ( don't even be tempted to try this) . Now you get the drift why there was no post so far?  But this one is a winner.

Got a bunch of bananas and all turning black only for your family members to give dirty looks at those ripe bananas? This recipe is for you. This way you are giving those bananas an uplift as well. Plus these are made with jaggery and whole wheat , what is holding you back from not  making  these pancakes ??? Kid friendly , Healthy and easy peasy as well. Do I need to sell these more?

Ingredients
Quantity
Whole Wheat Flour
1.5 cups
Jaggery
1 cup
Melted  Butter
½ cup
Milk
¾ cup
Ripe  Bananas
2 medium
Baking Powder
1 tsp
Vanilla Essence - optional
1 tsp
Chocolate Syrup
2 tbsp
Peeled and diced apple or fruits of your choice
1 cup
Cinnamon Powder
1 tsp
PS : Cups Spoons used are standard measuring units

If you are looking to make some waffles that are egg free this is the one that you should definitely give a try. You don't need to have waffle maker to make these. I do not own one either. That said there is no replacement of what comes out of those irons but these are good too with no compromise on taste and texture. You could make use of silicon molds available easily. Oh this might work as pan cake as well. I haven't tried it out. If you do so please tag me, share feedback and all that rituals you know. These are good for breakfast , after school snacks (oh there are no schools now, in general when schools reopen you know)


My way of making
1. Preheat oven to 230 C and brush a waffle silicon mold with melted butter. This is purely optional as its easy to demolf from these.
2. In a wide bowl add in whole wheat flour , Cinnamon Powder and baking powder. Stir well
3. In a mixer add in the bananas, milk ( reserve 1/4 cup to add later to the flour) , jaggery powder. Pulse them together slowly and then give a full churn until well combined.
4. Add the wet ingredients into the dry ingredients along with vanilla essence.
5. Add the remaining milk and butter and combine well. The batter should look like cake batter.
6. Pour the batter into the silicon mold with help of ladle.
7. Bake in pre-heated oven for 12 minutes at 230 C.
8. Let cool for 5 minutes and then demold.
9. Serve with chocolate syrup and peeled fruits of your choice.
10. Relish them warm with coffee or milk.

Notes
1. If you do not have butter use oil.
2. For vegan version use coconut milk, coconut oil
3. If you do not have bananas use flax seed powder in the ratio 1 tbsp flax with three tbsp water in place of one egg. This recipe calls for one egg if you are using one.
